Sultry summer days call for light, healthy, simple appetizers that can be put together in a matter of minutes. Your guests will love these tasty skewers with all the elements of a classic caprese salad. Make these in advance if you like, but be sure to let them come to room temperature before serving – much more flavorful that way.
Tomatoes are truly summertime’s superstars and these little bite-size ones brighten up the platter and are so delicious with fresh basil.
24 grape tomatoes
24 cherry-size fresh mozzarella cheese balls, drained
24 fresh basil leaves
1 jar marinated artichoke hearts
1 package sun dried tomatoes
1/4 teaspoon thyme
a sprinkling of Kosher salt
freshly ground black pepper
- Soak the package of sun dried tomatoes in warm water until soft. Drain the water and continue to soften in olive oil and thyme. Drain oil from the sun dried tomatoes after about 20 minutes.
- Drain oil from the packaged mozzarella balls and begin to assemble on little skewers.
- Alternate the vegetables on the skewers for a beautiful presentation. Once assembled sprinkle with Kosher salt and freshly ground black pepper.
- Voilá! You are ready to serve and enjoy.
